You can take max 11 smelter wedges - 6 at start, 4 - from chest near 2/3 bonfire and one from chair of sir alone. So you will have 11 fragments of soul. 12th fragment drops from fume and then you receive whole soul. You can still use smelter wedge after defeat alonne and fume.
